Day 4 - The Best Lazy Man Tuna Salad


Day 4 – The Best Lazy Man Tuna Salad – 12:47

Ingredients
1 Can of Tuna
Mayonnaise
Barrel Pickles (I use Gundelsheim)
Granulated Garlic
Onion Powder
Dill Weed
Salt
Pita Bread (optional)
Open tuna and drain of water. Put tuna into bowl. Mix in 2 ½ generous spoon-fulls of mayonnaise. Take one barrel pickle and cut into cubes. Mix this into the tuna also. Lightly coat tuna in dill weed and onion powder. Add granulated garlic and salt to taste. Enjoy. OPTIONAL: Spread over pita bread.

Thoughts: This is actually a dish I make whenever I think of tuna. Normally I wouldn’t do something I know is a tried and true recipe, but today I was in a hurry and needed a quick and healthy fix. I introduce to you, the best lazy man tuna salad. It’s the basics of what my mom used to make for me, only spruced up a little. The pickles give it a ‘crunch’ factor, and the dill weed just makes your mouth water. This takes less than five minutes to do when you know what you’re doing, so its great for when you are running late (like I am, lol).
Things to remember for next time: Nothing. This, as stated above, is a tried and true recipe. However, if you’re looking for a little extra something, boiling an egg and cutting it into cubes to add to the tuna is a great accessory, but its just adding more calories and it probably wouldn’t be able to be called ‘lazy man tuna’ anymore. Heehee

Day 3 - Carnivore Creation




Day 3 – Carnivore Creation 12:15
Ingredients
2 Chicken Strips
1 Packet of Papa Johns Special Garlic Seasoning
KC Masterpiece Original Barbecue Sauce
Smoky BBQ Sea Salt

In a bowl large enough for the chicken strips, squeeze a generous amount of KC Masterpiece Original Barbecue Sauce. Add the packet of Papa Johns Special Garlic Seasoning. Next grind the smoky BBG Sea Salt in to taste. Mix well with a knife. Next, put chicken breasts one at a time into the sauce. Lather on the chicken with the knife or with your hands until chicken is completely covered. Place chicken and any left over sauce into skillet and heat until cooked, flipping chicken as needed. NOTE: KC Masterpiece Original Barbecue Sauce can easily burn or stick to skillet. Take care, and grease skillet if needed. Enjoy! Optional: After cooking, dipping chicken in plain KC Masterpiece Original Barbecue Sauce is also a good idea.

Thoughts: Apparently I should just stick with cooking chicken because it always seems to come out better than my other dishes. Haha. So, this dish tasted great. It had the barbecue taste I was going for, but it wasn’t overwhelming and not too smoky, probably because I didn’t grill it. It crisped up nicely on the outside edges, and it packed full of flavor. The chicken stands on it’s own, but if dipping it into the KC Masterpiece Original Barbecue Sauce is more your style, that’s awesome too. I personally can’t decide which I like better.

To Keep in Mind for Next Time: I think that brussel sprouts would be a nice accompaniment to this dish. Of course, then I couldn’t name it ‘Carnivore Creation’.

Day 2 - Easy Asparagus Egg

Hello, world. It is the summer of 2010, and I am finally out of highschool for always and eternity. My name is Acorn, and I've created a mission for myself this summer, and possibly all of my summers.
THE GOAL: The goal here is to eat healthy lunches during the summer, the recipies of which are made up by yours truely. I've got a feeling that during the weekends I wont be posting a blog since my family is home during the weekends, but besides that you can expect a healthy lunch recipe every day. I hope you enjoy it. Comments are always welcome. I would love to know how I can improove my blog, or if you just enjoyed your lunch for the day!

Day 2 – Easy Asparagus Egg 12:00
Ingredients:
1 Can Asparagus
2 Eggs
Italian Seasoning
Dill
Seasoned Salt

Drain asparagus and begin to heat in skillet. Once nearly done push asparagus to one side of skillet., Crack two eggs into other side of skillet and scramble. Once eggs begin to firm up, mix Italian seasoning to coat the top, seasoned salt to coat at least half, and dill to taste while adding in asparagus. Once egg and asparagus are finished cooking, Enjoy

Thoughts: Okay, so just after I threw this dish together and put it on the plate, I thought “Oh my word, what have I done?” I then proceeded to eat it anyway to tell all of you lovely people about it. I know, it LOOKS disgusting, but it actually doesn’t taste half bad, and I think with some reworking it might turn out to be something pretty enjoyable. At any rate, the egg and asparagus part mix together very well, but its got some texture issues. It all just kind of mushes in your mouth. Not so pleasant. At any rate, I really do think it has some potential, and maybe I’ll revisit this some time.

To keep in mind for next time: CRUNCH element, possibly bacon crinkled into it after its done heating. Not so much asparagus also, it takes away from the egg.

Day 1 - Italian Chicken Salad

Italian Chicken Salad


Ingredients:
2 Chicken Tenders
1 Clove Garlic
Italian Dressing
Onion Powder
Mrs. Dash Italian Melody
Curry Powder
Cyan Pepper
Poultry Seasoning
Lemon Pepper Seasoning
Italian Seasoning
Frenches Spicy Brown Mustard
Lettuce
4 Croutons
1 Fresh Tomato
Salt


Cut chicken into cubes and heat in a skillet. Add small amount of mustard and enough Italian dressing to coat chicken. Note: Italian dressing also going on salad so use sparingly. Also coat chicken in onion powder, Mrs. Dash Italian Melody, Poultry Seasoning, and Italian seasoning. Add curry powder, cyan pepper, and lemon pepper seasoning to taste. Grate garlic onto chicken. Let cook while stirring chicken to avoid burning. Place chicken in bed of salad. Add crushed croutons, cut tomato, and salt to taste. Add Italian dressing. Toss, and Enjoy.

Thoughts: Delicious. Seriously good. For someone who doesn’t like salad very much, this is right up there with Olive Garden salad, only more filling – probably from the chicken. The mustard gave the chicken a nice leg up, and the croutons gave the entire dish a wonderful crunch that the lettuce just couldn’t give. The tomato helped to make it taste fresh and not too heavy. This also didn’t take very long to make.


To keep in mind for next time: More mustard! Also, balsamic vinegar might be a nice addition.
