Hello, world. It is the summer of 2010, and I am finally out of highschool for always and eternity. My name is Acorn, and I've created a mission for myself this summer, and possibly all of my summers.
THE GOAL: The goal here is to eat healthy lunches during the summer, the recipies of which are made up by yours truely. I've got a feeling that during the weekends I wont be posting a blog since my family is home during the weekends, but besides that you can expect a healthy lunch recipe every day. I hope you enjoy it. Comments are always welcome. I would love to know how I can improove my blog, or if you just enjoyed your lunch for the day!
Day 2 – Easy Asparagus Egg 12:00
Ingredients:
1 Can Asparagus
2 Eggs
Italian Seasoning
Dill
Seasoned Salt
Drain asparagus and begin to heat in skillet. Once nearly done push asparagus to one side of skillet., Crack two eggs into other side of skillet and scramble. Once eggs begin to firm up, mix Italian seasoning to coat the top, seasoned salt to coat at least half, and dill to taste while adding in asparagus. Once egg and asparagus are finished cooking, Enjoy

Thoughts: Okay, so just after I threw this dish together and put it on the plate, I thought “Oh my word, what have I done?” I then proceeded to eat it anyway to tell all of you lovely people about it. I know, it LOOKS disgusting, but it actually doesn’t taste half bad, and I think with some reworking it might turn out to be something pretty enjoyable. At any rate, the egg and asparagus part mix together very well, but its got some texture issues. It all just kind of mushes in your mouth. Not so pleasant. At any rate, I really do think it has some potential, and maybe I’ll revisit this some time.
To keep in mind for next time: CRUNCH element, possibly bacon crinkled into it after its done heating. Not so much asparagus also, it takes away from the egg.
