Day 1 - Italian Chicken Salad


Hello, world. It is the summer of 2010, and I am finally out of highschool for always and eternity. My name is Acorn, and I've created a mission for myself this summer, and possibly all of my summers.


THE GOAL: The goal here is to eat healthy lunches during the summer, the recipeies of which are made up by yours truelly. I've got a feeling that during the weekends I wont be posting a blog since my family is home during the weekends, but besides that you can expect a healthy lunch recipe every day. I hope you enjoy it. Comments are always welcome. I would love to know how I can improove my blog, or if you just enjoyed your lunch for the day!

Italian Chicken Salad


Ingredients:
2 Chicken Tenders
1 Clove Garlic
Italian Dressing
Onion Powder
Mrs. Dash Italian Melody
Curry Powder
Cyan Pepper
Poultry Seasoning
Lemon Pepper Seasoning
Italian Seasoning
Frenches Spicy Brown Mustard
Lettuce
4 Croutons
1 Fresh Tomato
Salt


Cut chicken into cubes and heat in a skillet. Add small amount of mustard and enough Italian dressing to coat chicken. Note: Italian dressing also going on salad so use sparingly. Also coat chicken in onion powder, Mrs. Dash Italian Melody, Poultry Seasoning, and Italian seasoning. Add curry powder, cyan pepper, and lemon pepper seasoning to taste. Grate garlic onto chicken. Let cook while stirring chicken to avoid burning. Place chicken in bed of salad. Add crushed croutons, cut tomato, and salt to taste. Add Italian dressing. Toss, and Enjoy.

Thoughts: Delicious. Seriously good. For someone who doesn’t like salad very much, this is right up there with Olive Garden salad, only more filling – probably from the chicken. The mustard gave the chicken a nice leg up, and the croutons gave the entire dish a wonderful crunch that the lettuce just couldn’t give. The tomato helped to make it taste fresh and not too heavy. This also didn’t take very long to make.


To keep in mind for next time: More mustard! Also, balsamic vinegar might be a nice addition.
